I tried a new recipe tonight for Mock Apple Pie. You can use zucchini instead of apples and with the zucchinni producing like it is I defintely need something to use it in. It was actually pretty good and really did taste almost exactly like apple pie. I have been making zucchini bread too which is really, really good.
Tonight when I picked the garden I found a twin yellow squash. I also found two large zucchini squash that I guess had been missed when the garden was last picked. They are so hard to see on the vines that I am always missing some. I got quite a bit of okra too. Thank goodness I have been seeing the kids so I have been able to give them a lot of these vegetables.
Thought I would take a picture of the vegetables that I picked just tonight and the funny squash. Also got a picture of the pie before we cut into it.
Mock Apple Pie:
4-4 1/2 cups zucchini slices
1 cup sugar
4 tbsp lemon juice ( 1 large lemon)
1 tsp nutmeg
2 tbsp flour
2 tsp cinnamon
1 tbsp cornstarch
Peel and remove seeds from squash and cut in slices. Mix the rest of the ingredients. Place into pie crust.
Apple Crumb Topping
1 cup flour
1/2 cup butter
1/2 cup brown sugar
Blend together until butter is the size of peas. Place over pie filling. Bake at 350 degrees for 55 mintutes.

Hello! Your pie looks good! How did it turn out? :) What else have you been doing with your squash? I've made 6 loaves of zucchini bread (froze 1, ate 2, gave 3 away). I also used the yellow squash and zuch in 3 huge batches of soup- chicken noodle, minestrone, and taco and we ate some and froze the rest for fall.
